Line Cook at Mamaleh’s Brookline Jobs in Brookline at Mamaleh’s Delicatessen
About This Position:
The line cook is responsible for working a station as a member of a team. They will do prep, set up and break down a station, work service, and help clean the kitchen at the end of service.
The Line Cook position is divided into Line Cook 3, Line Cook 2 and Line Cook 1, with those in the Line Cook 3 and Line Cook 2 positions having the opportunity to advance through to the Line Cook 1 position.
Responsibilities and Expectations of Cook 3 and Cook 2:
- NOTE: There is no expectation of prior cooking experience for Line Cook 3.
- Follow recipes
- Set up and break down station
- Maintain station and prep work with proper rotation of food product
- Stay up to date on menu changes
- Participate in the preparation of new menu items
- Work collaboratively with BOH staff and FOH staff
- Hone existing skills while learning new techniques and building skill set
- Maintain cleanliness of station and any BOH work areas, including and not limited to refrigeration, cooking equipment, and prep areas
- Participate in deep cleaning of BOH work areas, including and not limited to refrigeration, cooking equipment, and prep areas
- Strong communication skills to convey needs to managers and teammates and ability to interact in a professional manner
- Able to maintain and ensure proper plate presentation and cleanliness
- Able to maintain a sense of urgency and comfort in a fast-paced environment
- Able to use our scheduling systems and software to communicate effectively with managers and coworkers
Responsibilities and Expectations of Cook 1:
- Must perform all the duties outlined above for Cooks 2 & 3, as well as the following:
- Must be able to work multiple stations
- Must have awareness of larger kitchen operations, contribute to special orders and work together to keep things running smoothly
Skills and Requirements for Cook 3:
- There is no expectation of prior cooking experience for Line Cook 3.

Skills and Requirements for Cook 2:
- Must possess all the skills outlined above for Cook 3, as well as the following:
- General knife handling, food safety & sanitation knowledge
- Work well with direction, but able to take initiative and be independent
- Able to take constructive criticism, learn quickly and constantly improve
- Have experience following recipes, troubleshooting, and thinking critically
- Positive, friendly and eager to learn
- Able to stay positive and calm under pressure

- Able to maintain mental athleticism and coordination of tickets and sending out plates
Skills and Requirements for Cook 1:
- Must possess all the skills outlined above for Cooks 2 & 3, as well as the following:
- Knowledgeable about most kitchen recipes and systems
- Ability to multitask in the kitchen, managing prep projects and service and work multiple stations
- 2 years of prior restaurant cooking experience, or proven capability
Physical Demands
- The physical demands for this position are seeing, hearing, speaking, reaching, lifting up to 50 pounds, standing for 10 hours, bending, going up and down the stairs multiple times a day with heavy loads, and moving intermittently during working hours. These physical requirements may be accomplished with or without reasonable accommodations.

- Start time may be adjusted for special events. End time may be adjusted for business decline/volume.
